Comté requires a long maturing period of at least six months.

It’s chewy paté acquires a fruity taste when made with summer milk, and a nutty taste when made from the milk of winter. During the maturation period it forms a hardened crust, which becomes a nice golden yellow. The crust reveals a soft and creamy pate.
