Jurassic D’Ètè Affinè
The milk used to make Jurassic cheese comes from cows of the Montbéliarde breed.
Made with raw cows milk the cheese is washed in a special brine solution twice a week for the duration of its 12 month aging. This cheese lends itself both to cheese boards and is also a great melting cheese due to its rich fruity aroma.
