The Traditional Balsamic Vinegar of Modena DOP "Extravecchio" is suitable for any food preparation, from appetizer to dessert and it is also a very good after-dinner if enjoyed pure at the end of the meal (Digestive effects). It is made of acetified cooked grape must only and is aged in wood barrels for minimum 25 years (with annual transfers "travasi" in different barrels).
It is produced using white grape must, which is acetified and matured in oak barrels. It has a typical gold colour which does not alter the colour of dishes. It adds a fruity and mildly acid aroma and flavour (excellent instead of wine vinegar). Especially recommended on fish and seafood.
Ideal for aperitif drinks, salads, raw and cooked vegetables, sauces, fish and seafood (marinades, scallops, oysters, prawns, salmon, sushi...), white meat (chicken and turkey), cheese, fruit salad...
